HAM AND CORN AU GRATIN  (Freezer Friendly)

 

This is another recipe from the 1966 Cookbook Collection: Favorite Recipes of America; Casseroles

For this recipe you will need:

2 c. cooked ham, chopped or cubed (any ham will do, including left over ham)
2 1/2 c. corn (canned, fresh, or frozen)
1/2 c. chopped onion
1/4 c. chopped green pepper
1/2 tsp. dry mustard
salt/pepper to taste
1 1/2 c. favorite white sauce (old-fashioned, simple white sauce is included at the bottom) 1 1/2 c. of alfredo works, also.
1/2 c. grated cheese
1/2 c. cheese-it crumbs, buttered bread crumbs, french fried onions, something yummy and crunchy on the top
Paprika

Arrange ham, corn, onion and green pepper in layers in a casserole. Add mustard to the white sauce; pour into the casserole. Top with cheese and crumbs; sprinkle with paprika. Bake at 375 for 25 minutes or until browned. Makes 4-5 servings.

FREEZER FRIENDLY DIRECTIONS:
Layer ham, corn, onion, peppers in a disposable or freezer safe 9×13. Add mustard to the white sauce; pour over casserole top with cheese, cover and freeze. On the day of cooking, thaw casserole, top with crumbs, sprinkle paprika, bake 375 for 25 minutes or until browned.
