Lori’s Calico Chili and Cornmeal Cheddar Biscuits

Lori’s Calico Chili
This is a hearty, spicy chili,perfect for winter nights. Cornmeal Cheddar biscuits are a great combination.
Cook time: 1 Hr 30 Min  Prep time: 10 Min  Serves: 10


2 lb lean ground chuck
1 lb breakfast sausage
2 medium onions, chopped
1 medium bell pepper, chopped
2 stalk(s) celery, chopped
1- 15 oz can(s) kidney beans
1 large can(s) pinto beans
1 can(s) whole kernel corn, drained
1 can(s) tomatoes with green chilies
1 can(s) chili ready diced tomatoes
1 can(s) tomato paste
3-4 Tbsp steak sauce (i used an a-1 type)
seasoned salt (to taste)
ground red pepper (to taste)
2 pkg chili seasoning
2 Tbsp chili powder
1 tsp cumin
hot sauce to your liking!


1. Brown meat with onions, pepper, and celery. Drain. I put it in a dutch oven at this point.

2. Add all other ingredients. Allow to simmer until the flavors marry. About 30 minutes-1 hour.

Cornmeal Cheddar Biscuits

Cornmeal Cheddar Biscuits Recipe
Everyone in my family gave these a “thumbs up.” Definitely what we consider a “do over!”
Cook time: 15 Min  Prep time: 10 Min  Serves: Makes 12-15 biscuits


1 1/2 c all purpose flour or bread flour
1/2 c self-rising buttermilk corn meal
2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 c butter, softened
3/4 c shredded cheddar
1 1/4 c milk (buttermilk is great in this!)


1. In a bowl, combine dry ingredients.

2. Cut in butter until crumbly

3. Stir in cheese and milk.

4. Drop by serving spoon (about 1/4 cup) onto a sprayed baking sheet. Bake at 450 for 12-15 minutes or until golden brown.
