Picadillo Carne Molida con Papas

Ingredients:

1 lb. lean ground beef
1 potato, cubed
1 carrot, sliced
1 small onion, chopped
1 small bell pepper, chopped (if desired)
2 fresh tomatoes, chopped (or 1 can tomatoes with green chilies, drained)
1 tsp cumin
garlic (if desired)
3-4 fresh cilantro stalks
salt/pepper to taste
If you want this spicy, jalapenos may also be added.

Brown beef, drain.  Add in onions, carrot, tomatoes, spices.  Cook until onions are translucent.  Add in cubed potato.  Cover and simmer until potatoes are tender.

Another preparation: Saute potatoes in 1 TBSP Olive oil.  Add in onion, carrot and cook until tender.  Remove from pan.  Brown Beef with spices.  Add vegetables back into pan with beef.  Add tomatoes. Heat thoroughly, serve.

This is served on tortillas, like a taco.  This can also be served with any toppings you would regularly use for tacos.  This would also make great burritos.

Serve with fresh tortillas and Mexian  or white rice.
