Tacos for a crowd!

My husband taught me to make tacos this way.  They feed a huge crowd and it only takes 2 lbs of ground beef!  I don’t have a picture, but this is a great recipe.

2 lbs ground beef

2 packs taco seasoning

1 1/3 cup water

2 tbsp olive oil

1 cup rice

1 can tomatoes with green chilies

1 small can tomato sauce

2 cups water

2 cans refried beans


1 TBSP chili powder

1 TBSP cumin

1 TBSP dehydrated minced onion

Brown ground beef.  Drain, rinse.  Add taco seasoning and 1 1/3 cups water.  Let cook until sauce thickens. Meanwhile, heat olive oil in pan and saute 1 cup rice.  When rice starts to brown, add tomatoes, tomato sauce, chili powder, minced onion, cumin, 2 cups water.  When rice starts to boil, cover, reduce to simmer, and cook about 12 minutes or until rice is done.  Put beans and rice mixture into ground beef.  Stir well.  Serve with tortillas or taco shells of your choice and any taco toppings you would like.

NOTE: I also use this combination to make nachos and my family LOVES it!
