I get up each morning at 5:30, in order to cook breakfast for my family. During breakfast, my husband leads our family in Bible Study. I look for quick recipes that are somewhat healthy. These cake mix muffins can be changed up in so many ways. I serve these with some sort of protein (ham, sausage links, etc) Pick one and give it try. If you have other variations, please share!!
Fruit Pie Filling/Cake Mix muffins
One can of pie filling of your choice
One box of cake mix**
Mix the three ingredients together. This will be thick! Place in muffin cups to 3/4 full. Bake on 350 degrees for 15-20 minutes or until a toothpick inserted comes out clean. This makes 16 large muffins. These muffins are 180 calories and 2.7 grams of fat. I use yellow cake mix with apple or peach pie filling. Blueberry pie filling will make the muffins a funny color, but the family didn’t mind.
Variations: Strawberry cake mix/strawberry pie filling; Spice cake mix/peach pie filling; chocolate cake mix/chocolate pie filling; Nuts, raisins, cranberries, trail mix, granola, flax, oats, etc.
Chocolate Chip Cake MixMuffins
Yellow cake mix (or chocolate)
Chocolate instant pudding
3/4 cup water
1/4 cup applesauce
1/4 cup canola oil
1 cup chocolate chips
Mix together first 6 ingredients. Add Chocolate Chips. Fill muffin cups 3/4 full. Bake on 350 degrees for 15-20 minutes or until toothpick inserted in center comes out clean.
Variation: Banana cake mix/vanilla or banana pudding mix/3mashed bananas/nuts
